What Is the Edo-mae Sushi Nigiri Course?

  • I only want to learn Nigiri.
  • I'd like to serve sushi as a professional chef.
  • I want to improve my sushi skills in the shortest possible time.
  • I want to become faster and more precise when making sushi.

The Nigiri Course at Tokyo Sushi School was created specifically for people with these goals.
Unlike a full sushi chef program, this course focuses entirely on the practical skills required to make beautiful, professional-quality Nigiri Sushi.
Students do not learn how to fillet whole fish.
Instead, you will practice using pre-prepared fish to learn:

  • Proper slicing techniques for sushi toppings
  • Nigiri preparation
  • Sushi rolls
  • Beautiful presentation
  • Efficient serving techniques

The goal is to develop practical Nigiri skills through 30 hours of intensive hands-on training over five days.

What You Will Learn

  • Handling sushi rice (Shari)
  • Proper Nigiri forming techniques
  • Professional fish slicing for sushi toppings
  • Beautiful presentation techniques
  • Speed and efficiency
  • Consistent quality
